2019 Rosé of Pinot Noir

Harvest date — September 19, 2019

Brix at harvest  — 22 degrees

Titratable Acidity — 7 g/L as tartaric acid

Alcohol by volume — 12.8%

This 100% Pinot Noir Rosé was made from clones 459 and 2-Alpha from Underwood Mountain Vineyards, at 1100 feet elevation, grown intentionally for rosé and hand-picked in the morning hours. 75% whole-cluster pressed and 25% foot-stomped (pigeage a pied) with 4-5 hours skin contact, then pressed to taste. Slowly fermented in stainless steel for 29 days at low temperatures with a specifically selected inoculum. Bottled on January 26, 2020.

2019 Grüner Veltliner

Harvest date — October 11, 2019

Brix at harvest  — 22-23 degrees

Titratable Acidity — 7.2 g/L as tartaric acid

Alcohol by volume — 12.9%

This 100% Grüner Veltliner was grown at Soluna Vineyards on Underwood Mountain at 1800 feet elevation and hand-picked in the morning hours. 50% whole-cluster pressed and 50% foot-stomped (pigeage a pied) with 72 hours of skin-contact, then pressed. Slowly fermented in Acacia barrels over 36 days at low temperatures with a specifically selected inoculum. Bottled on February 19, 2020.

2018 Pyroclastic  
— Sparkling Gewürztraminer

Harvest date — September 6 & 22, 2019

Brix at harvest  — 19-20 degrees

Titratable Acidity — 10-11 g/L as tartaric acid

Alcohol by volume — 12.1%

This 100% sparkling Gewürztraminer from 2 different vineyards, both at 1400 feet elevation, was grown intentionally for sparkling wine and hand-picked in the morning hours. 75% gewürztraminer from Lamonti Vineyards and 25% gewürztraminer from Oak Ridge Vineyard, the grapes were whole-cluster pressed, then fermented separately in Acacia wood barrels and stainless steel tanks, at low temperatures with a specifically selected inoculum. Blended together and bottled on December 15, 2019 with encapsulated yeast for secondary fermentation in the bottle. Hand-disgorged April 15, 2020 and ongoing with no dosage.
